What I like most about this cookbook is how these recipes make it possible to have delicious Indian food in a fraction of the time usually required for traditional Indian recipes. Part of that credit goes to the Instant Pot, because pressure cooking allows the food to retain more of its flavor than slow or oven cooking methods. Indian food is one of the most natural for the Instant Pot since a pressure cooker is already so widely used already. The author's introduction is well written and well formulated for an American cook with some basic knowledge of Indian cuisine.
